My belief is that the oil is great for cooking since it is the most stable oil in terms of high heat and oxidation, but not really meant to be eaten as a food. Any oils should be kept to a minimum in the diet.

Not sure what to gleen out of the two articles. I have been using mostly coconut oil for years, I am th2 dominant and have allergies. Sooooooo…..I think I will experiment for a few weeks of no coconut oil and see how my allergies do, if they are better/eliminated, I would tend to believe your MCT article more, if not, I may continue to use coconut oil, but more sparingly, just to be safe.

Switched to Canola Oil (rapeseed) which was a little better. Then I read about Olive Oil, found a very light one and switched to it which was a significant difference: no lethargy or feeling of fullness with olive oil. After reading more recently about virgin coconut oil, I bought some and gave it a try. What a difference. Instead of lethargy or fullness, I felt more energy after eating eggs. I was able to increase eggs in my diet significantly (2-3 a day) but had to add 5-10 mg Biotin to my supplements because the egg white has a protein that binds with Biotin so you become functionally deficient. Bottom line: my experience with virgin coconut oil was a pleasant surprise and an energy boost and I recommend you try it for cooking. The medium chain triglycerides have a lot of benefits for the heart, liver and kidneys. My cholesterol is consistently in the 100-120 range (low end).

Which is a real bummer as it is so good for you. I tried a little bit every now and then but then one day I was lightly frying chicken in coconut oil and I had severe spasms which caused me to be hospitalized for the night. So I tend to steer clear of it now. I am interested in getting your cook book but what can I substitute the coconut for.? Also I am in Australia, do you take clients from Oz, via Skype – if so would the blood test I do here be relevant to your US markers. Great website, as I am typing this histamine levels are sky high and I am having a wobbly. Just popped some DOA and Telfast (Fexo) hoping it is going to calm the farm.
